INSPIRATION MENU
STARTERS
Lobsterbisque.
Lobsters are sautéed with herbs, flamed in cognac and blended with organic cream and white wine into a delicious bisque.
Carpaccio.
Thin slices of raw beef are served on a bed of sweet chili salsa and added on top, fresh herbs and spring onions. Before serving the chef adds fresh parmesan cheese.
Salmon and coalfish
Filorapped salmon and coalfish are served with salmonspawn and organic olive oil flavoured with fresh herbs.
All starters are served with warm bread and organic butter
MAINCOURSES
Dorade
The dorade is filled with herbs and organic lemon and grilled in the oven. Served with fresh organic vegetables of the season, organic whitewine sauce and small potatoes tossed with parsley
Sirloin of veal
A juicy sirloin of veal is grilled pink and served with a heavy glace, fresh organic vegetables of the season and small potatoes tossed with parsley.
Lamb
Shank of lamb served with grilled pebbers, fresh organic vegetables of the season and small potatoes tossed with parsley.
DESSERTS
Chocolate cake
Chocolate cake made of strong, dark Belgian chocolate covered with a creamy chocolate mousse. Served with homemade vanilla ice cream and a salsa made of fresh plums.

Organic cheese
Selection of the best Danish and foreign organic cheeses. For example Danish Esrum cheese, Danish
Blue Cheese or Pecorino from Sardinia.
